- 3 ears of corn, stripped
- a couple of leaves of spinach/silver beet
- 1 cup of mushrooms
- 3-4 cloves garlic crushed
- 1 onion
- 1 tbsp mustard
- 8-12 eggs (depending on how large you want to quiche to be)
- 1/2 tbsp veggie stock
- some parmesan cheese to sprinkle on top (opt.)
Pre heat the oven to 180 degrees.
Saute the onion and garlic for a couple minutes until soft. Add the mushrooms, corn and spinach/silver beet, stir for a few minutes and then transfer the mixture to a greased quiche pan.
In a separate bowl mix together the eggs, mustard, veggie stock and Parmesan cheese.
Pour the egg mixture over the vegetables and put the quiche in the oven for about 30 minutes or so.
Serve with a green salad.
